Insomnia Cookies chain to open first Lehigh Valley location this week, with the potential for more to come

The wait is over. The Lehigh Valley’s first Insomnia Cookies location will serve cookies, ice cream and more when it opens Tuesday in Bethlehem.

The new location will begin its soft opening period at 4 p.m. on the ground floor of the Six 10 Flats apartment building at 610 E. Third St., Director of Development Terry Johnston said, adding that the chain has eyed the region for development “for quite some time.”

“The proximity to Lehigh University is obviously very appealing to us,” he said. “Our original business model was locating our bakeries on or near college campuses to provide the college students with a late-night snack, basically.”

The soft opening period will last until the grand opening July 23. The operating hours will be 11 a.m. to 2 a.m. all week.

Johnston said Insomnia Cookies doesn’t have any other planned Lehigh Valley locations “in the pipeline” yet, but that it is searching for additional spots within and near the region.

With more than 340 locations open in the United States, Canada and the United Kingdom, the chain intends to open 70 locations globally this year and just under 100 locations in 2026, Johnston said.

The chain’s first store opened in Syracuse, New York, in 2006, according to its website.
